Anders als viele ihrer Gem\u00fcsekollegen haben sie einen nennenswerten Eigengeschmack. Sie schmecken insbesondere wenn sie jung sind, und noch besser mit Butter und Salz. Man kann sie im Balkonkasten ausbr\u00fcten, und wenn sie mal zu lange liegen, durch ein Wasserbad entschrumpeln. Wer w\u00fcrde das nicht gerne k\u00f6nnen.<\/p>\n\n\n\n<p>Was l\u00e4ge also n\u00e4her, als sie haltbar zu machen und gleichzeitig zu einem feinem Bier-und-Brot-Accessoire zu bef\u00f6rdern. In der Tat haben Pickles jeder Art in dieser Darreichungsform ihre gr\u00f6\u00dfte Daseinsberechtigung. <\/p>\n\n\n\n<p>Im Netz finden sich verschiedene Rezepte f\u00fcr fermentierte Radischen, ich habe mich zun\u00e4chst einer einfachen Variante versucht, nur in Salzlake mit etwas Estragon.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/trallafitti.life\/wp-content\/uploads\/2020\/05\/rosaradieschen2.jpg\" alt=\"\" class=\"wp-image-89\" width=\"232\" height=\"325\" srcset=\"https:\/\/trallafitti.life\/wp-content\/uploads\/2020\/05\/rosaradieschen2.jpg 464w, https:\/\/trallafitti.life\/wp-content\/uploads\/2020\/05\/rosaradieschen2-214x300.jpg 214w, https:\/\/trallafitti.life\/wp-content\/uploads\/2020\/05\/rosaradieschen2-107x150.jpg 107w, https:\/\/trallafitti.life\/wp-content\/uploads\/2020\/05\/rosaradieschen2-300x420.jpg 300w\" sizes=\"auto, (max-width: 232px) 100vw, 232px\" \/><\/figure><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Fermentierte Radieschen<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Radieschen, gewaschen und geputzt<\/li><li>2%ige Salzlake (etwa 1l Wasser + 20g Salz)<\/li><li>1 Zweig Estragon, gewaschen<\/li><li>Einmachglas<\/li><\/ul>\n\n\n\n<p>Die Radieschen m\u00f6glichst dicht in ein Einmachglas f\u00fcllen, ruhig etwas stopfen, so dass sie sp\u00e4ter m\u00f6glichst nicht schwimmen, sondern an ihrem Platz bleiben. Estragon-Zweig zwischen die Radieschen friemeln, Glas mit Salzlake auff\u00fcllen, so dass die Radieschen bedeckt sind. Deckel locker zudrehen. <\/p>\n\n\n\n<p>Ich habe den Radieschen ihre Mikroorganismen danach sieben Tage bei Raumtemperatur starten lassen &#8211; am Ende sieht man sie schon deutlich &#8222;blubbern&#8220;. Danach Aufenthalt im K\u00fchlschrank f\u00fcr mind. drei weitere Wochen. <\/p>\n\n\n\n<p>Fun fact: Die Radieschen geben die Farbe der Schale an die Salzlake ab und sehen im Glas hinterher eher wie rosa Marshmellows aus. \ud83d\ude42<\/p>\n\n\n\n<p>Haps!<\/p>\n\n\n\n<p>(#spoiler Das Ergebnis schmeckt salzig-sauer-fermentig, mit nur noch einer sehr milden Radieschen-Sch\u00e4rfe.
